The Department was organized in 1992.

The total number of full time faculty – 22 employees, including: 20 research-and-academic staff, of which  5  professors, 4 Ass. Prof., 6 Senior Lecturers, 5 assistants.

RTD activities of Department

Research work of academic-and-educational staff of the Department is an integral part of the research educational activities and the organic component of the research work of the University. This work is carried out in accordance with the Concept of the Scientific-and-Educational Activity of the University, perspective and current plans of research works, in certain scientific areas of RTD of KSUFTT.

The research work on Department focuses on fundamental and applied research with a focus on developing ways to preserve food quality during processing, expertise of goods and other relevant aspects of the national and international level.

Scientific research of the department is based on the integration of science, education and business practices, so the research works of the Department is carried out in close cooperation with the Institute for Problems of Cryobiology and Cryomedicine of the National Academy of Science of Ukraine (NASU), the Institute of Animal Husbandry of the Ukrainian Academy of Agrarian Science (UAAS), the Institute of Vegetables and Melons of UAAS, the Poltava University of Economics and Trade other leading institutions of Ukraine with the involvement of industrial enterprises: OJSC Yampolsky Cannery, Shevchenko Agrofirm Ltd, JSC Hladoprom, LLC Peak & K Ltd, Novozhanov Meat Processing Plant Ltd, Berezovka and Chuguyev mineral water plants, the Kharkiv Plant of Sparkling Wines and others.

Main RTD areas of the Department:

  • formation of quality food products and semi–finished the production and storage;
    scientific basis of the formation of the quality of food for canning cold;
  • Improving the quality of examination and semi–finished products;
  • development of methods for the examination of products and semi-finished products from raw materials of vegetable and animal origin;
  • ecological safety of food production;
  • assessment of the quality and preparation of water for the food industry;
    environmental monitoring and foresight;
  • development of systems germicidal disinfection of water and soft drinks;
  • development of technology and systems of UV-disinfection of liquid foods;
  • development of technology and UV-wastewater disinfection in food production;
  • to conduct an independent expertise of the quality of water and soft drinks;
  • other specialized research.

International RTD activities

Research–and–educational staff of the Department during the past 5 years, has actively participated in international scientific conferences, international fairs and exhibitions, competitions and other similar events, including how to study the possibility of participation in the European Framework Program (RP) Science and Technology development, in particular in FP7 (2007–2014), and preparing specific research proposals in the framework of competitions announced by the European Commission, for example:

In 2007, within the contest of announced by the European Commission (EC)  Call for Proposal KBBE–2007–2–3–02 «Evaluation and improvement of existing food and feed technologies» Directions «Cooperation», Theme 2 «Food, agriculture and biotechnology» Activity 2.2: Fork to farm: Food including seafood), health and well being, Area 2.2.1 Consumers, Department has explored the possibility of searching specialized European research consortia and submission   a project proposals concerning  the readiness of their participation in such FP7 research consortia.

Currently departments of Faculty spends much organizational work on searching for profile consortia within WP–Food 2016–2017 of the  Sub–priority  Food Security Priority area  Societal Challenges  2 EU Program Horizon 2020 (2014–2020)    first of all  – in area of food quality & safety, food processing, experise of goods and in others relevant research areas.

 Laboratory facilities of Department

Department has two equipped research-and-training laboratories, which ensures optimum conditions for research of any complexity:

  • The Laboratory of Cryoscopy, Quality Management and Environmental Safety.
  • The Laboratory of Problems of Safety and Environmental Expertise of Water and Food Products.

The main areas of research laboratories – expertise of quality of food, semi-finished and non-food products.

What type of specialized expertise can perform Department of Merchandising, Quality and Environmental Safety Management?

The Laboratory of Cryoscopy, Quality Management and Environmental Safety:

  • expertise of the quality of food products and semi-finished products in the production and storage;
  • expertise of the quality of food for canning cold;
  • expertise of the quality of products and semi-finished products from raw materials of vegetable and animal origin;
  • expertise of the quality of the environmental safety of food production;
  • other specialized expertise on the customer's request.

At the Laboratory of Problems of Safety and Environmental Expertise of Water and Food Products:

  • expertise of the quality of water for the preparation of the food industry;
  • environmental monitoring and foresight;
  • independent expertise of the quality of water and soft drinks;
  • other specialized expertise on the customer's request.

Department is also ready to perform a core part of the project profile works and to carry out research expertise on topics proposed by the European coordinator of the project consortium.

Scientific achievements of Department

  • received more than 45 titles of protected documents (patents of Ukraine for utility model);
  • developed 15 technical specifications (TS) and technological instructions (TI), published more than 1,000 articles and abstracts;
  • 9 dissertations are defended, of which 10 – for the degree of Candidate of Technical Sciences (Cand in TechSciD), 2 – for the degree of Doctor of Technical Sciences (TechSciD).

Scientific publishing activity of Department

Was published 11 monographs, 2 textbooks, 5 study guide. Department staff received 9 patents, approved 9 packag of regulatory documents (TS – Technical Specifications, TI – Technical Instructions). Scientists of the Department participated in more then 40 scientific–and–practical conferences, different levels, including more then 15 – international.
