The Department was organized in 1970.

The total number of regular staff of the Department  – 14 employees, of which 3 professors, 2 doctors of science, 7 assistant professors, 3 senior lecturer, 1 assistant.

The basis of RTD activity at the Department

Research activities of the Department of Hotel and Restaurant Business of the Faculty of Management of KSUFT conducted according to the Plan of research work of the University both on the State budget and also on self-financing contractual topics.

Priority of RTD’s areas

Currently, Department carries out both highly professional training and teaching, and a high-quality RTD activities.For example, on State budgetary subjects were performed research in the following areas:

  • Study of heat mass-transfer processes and equipment for heating and cooling food processing
  • Development of advanced energy and resource-efficient processes and equipment concentration and drying of food raw material
  • Development of recommendations for improving the performance of the dryer for vegetable raw materials under the influence of high pressure
  • Theory and technique of drying heat-labile raw materials in installations with mixed heat supply
  • Development of a working project for the heating system of technological capacity fructose syrup for the end user object PJSC Kharkiv Biscuit Factory
  • Development of advanced energy- and resource saving processes and equipment for heat processing of food raw materials

The creative team of scientists of the Department was actively involved in the performance of the research work under the title The development of advanced energy and resource-efficient processes and equipment for heat processing of food raw material  on the order of the Ministry of Education and Science of Ukraine (MESU) and related activities of the Energy Strategy of Ukraine until 2030. The results of RTD works of the research topics have been introduced in the industrial production of many enterprises of Ukraine and NIS countries, in academic process during the training of engineering specialties.

International  RTD activity

Research-and-academic staff members of the Department over the last 5 years, has actively participated in international scientific conferences on topical issues of improving the designing of refrigerating and trading equipment, as well as development of processes and technologies for processing of food raw materials and other priority areas, as well as in specialized fairs and exhibitions. Including studied the possibility of participation in the European Commission's Framework Programs (FP) of Research-and-Technological Development (RTD), in particular in FP7 (2007-2014).

In 2007, within the contest of announced by the European Commission (EC) Call for Proposal KBBE-2007-2-3-02 «Evaluation and improvement of existing food and fodder technologies». Directions «Cooperation», Theme 2 «Food, agriculture and biotechnology», Activity 2.2: Fork to farm: Food including seafood), health and well-being. Area 2.2.1 “Consumers”, the departments of the Faculty prepared own project proposals for possible project consortia on their participation in the implementation of the following technical specifications, for example: it was developed and distributed through direct e-mail address dispatch to target profile addressees  the following proposals to probable European consortium  project coordinators on readiness of KSUFTT to perform as consortia university-partner  a part of all-consortium research project work, including:

  • Within  the European Commission Call for proposals KBBE-2007-2-3-02: Assessment and improvement of existing food and feed technologies  Department has prepared the following project proposal: Development and scientific substantiation of technology of freezing and storage of food systems, ensuring the highest safety of the nutritional value of products and prolongs their storage.
  • Other specific proposals.

Within the called by EC terms of reference on formation of project consortia and participating in the project partners in the Direction  Cooperation, Theme 2 Food, agriculture and biotechnology,  Activity 2.2: Fork to farm: Food including seafood), health and well being, Area 2.2.3 Food processing.

Project «BLACKSEAFOOD»*(Characteristics and deep analysis of bioactive components in traditional food Black Sea countries to improve their nutritional effectiveness) to the term of reference of Call FP7-KBBE-2008-2B (announced 30.11.07, closed 26.02.08), Consortium Coordinator (Project Partner No 1) – TROYKA-METU – Consulting-and-innovation company at the Middle East Technical University (METU Technopolis), Ankara, Turkey.

In the preparation of the Ukrainian part of the above consortium project took part also and Department of   Refrigerating and Trading Equipment and Applied Mechanics of the Faculty of Equipment and Technical Service of KSUFTT.

Participation of departments of the Faculty in international research programs out of the EU 7th Framework Program.

Within framework of International RTD collaboration out of FP7 during development of 6-years (2008-2014) Norwegian-Ukrainian  Pilot Program JAREC Kharkiv-Norway (The Joint Applied Research Economic Cooperation Kharkiv-Norway).

Department of   Refrigerating and Trading Equipment and Applied Mechanics has prepared the project proposal on development and implementation of technology for the processing of vegetable raw materials under the title FCP (FISHCRYOPROCESSING) – Ensuring the maximum level of safety of food value of fish, increases of terms of its storage, reduction of the weight loss of fish in the refrigerating production chain with the help of introduction of innovative technology of freezing and long storage of frozen fish - CFP, stipulating perfection of technological regimes and means of its control.

Besides that were prepared:

  • the research development  of scientifically suond and displayed  mathematical models and ideas about  of the biochemical and warm-and-moist processes in the food raw materials of animal and plant origin that occur during its refrigeration processing and refrigerated storage and directly related to the change in (losses) of its nutritional value and the masses,
  • the project within the European Personnel Program FP7-PEOPLE-2012-IRSES: Nutritional Labeling Study In Black Sea Region Countries and the draft program of the European Commission TEMPUS «Higher Education for the Increase of European Identity through Research,
  • others DTD research developments.

Expected involvement of Department  in FP8 - Horizon 2020 (2014-2020)

Currently Department spends much organizational work on searching for profile consortia within WP-Food 2016-2017 of the  Sub-priority  Food Security Priority area  Societal Challenges  2 EU Program Horizon 2020 (2014-2020)    first of all  – in the field of improving designing of refrigerating and trading equipment, as well as development of processes and technologies for processing of food raw materials and other priority areas.

Department’s laboratory facilities

At the Department set up and operate the following profession-and-training and RTD laboratories:

  • Laboratory of cooling cycle disciplines, equipped with modern equipment of cold industry.
  • Laboratory The Virtual Trading Room of trade cycle disciplines, equipped with modern facilities for the study of processes of trade and restaurant business with computer equipment and software packages 1C  Enterprise.
  • Laboratory of disciplines of professional-and-practical training of future specialists in the field of service and maintenance of the profile industry.
  • The Laboratory of disciplines of mechanical cycle: 1. The Machine Elements. 2. The Strength of Materials. 3. The Materials Science.

Cooperation with the Danfoss Ukraine Company provides for students and researchers an opportunity to use in the professional training and RTD process modern educational and design computer programs for the calculation and selection of refrigeration and equipment demonstration visual material (stands, videos, educational films), to undergo training on the basis of the Danfoss Ukraine Company.

To improve the quality of training at the Department  the Danfoss Ukraine Company in 2012  has transferred to the Department as a sponsorship  modern refrigerating equipment.

Profile research and industry expertises that  the Department of Refrigerating and Trade Equipment and Applied Mechanics of the Faculty of Equipment and Technical Service of KSUFTT can actually performs in the case of address to him with such request possible European project consortium within the Horizon 2020 Programme:

  • Applied targeted research and industry examinations to develop recommendations for improving the heat mass exchange processes and equipment for the heating and cooling processing of food products.
