RTD activities of Department

The basis of RTD activity at the Department

Research activities of the Department of Hotel and Restaurant Business of the Faculty of Management of KSUFTT conducted according to the Plan of research work of the University both on the State budget and also on self-financing contractual topics.

Priority of RTD’s areas:

  • execution both low cost (State budget) and also self-financing scientific themes on the problems of hotel-and-restaurant business  both in Ukraine and abroad
  • research trends of the development of hotel-and-restaurant business in the world
  • simulation of modern forms of organization of the hotel-and- restaurant sector
  • development of innovative technologies of customer service in the establishments of hospitality industry in modern conditions
  • development of modern methods of quality management services of hotel-and-restaurant business
  • Innovative approaches in the project development and creative solutions in the design of business hotel and restaurant industry
  • other specialized areas

Scientific schools at the Department

At the Department was formed and acts now the following scientific school: The Theoretical and Practical Aspects of the Conservation of Biologically Active Substances of Fruit and Vegetable Raw Material During its Processing (Scientific supervisor of the school – Dr. Liudmyla Maliuk, TechSciD, Prof, Acad. of Ukrainian Technological Academy - UTA , Head of the Dept).

Science  activity of this school is related to the problems of creation, improvement and introduction of a new advanced technologies for processing of fruits, berries and vegetables, which are aimed at the preservation of biologically active substances, raising nutritional value, improved organoleptic and environmental preservation.

The results of scientific researches, conducted within the framework of the above indicated scientific schools, are being introduced both in the educational process, and also in the practice of activity of  enterprises of hotel-and-restaurant business.

Topics of some request for technical proposals (RFTP) of current scientific researches, on the which scientists of the Department are working now:

  • theoretical and practical aspects of the conservation of biologically active substances of fruit-and-vegetable raw material during its processing
  • modeling of combined processes and the development of resource-saving equipment for the processing of fruit-and-vegetable raw materials
  • development of technologies butter biscuits with food processing grape marc
  • development of technologies of dessert products based on ultra-filtration of milk derived raw materials
  • development of recommendations to improve the standardization and certification of hotel-and-restaurant business services in Ukraine
  • strategy of development of the enterprises of restaurant business and tourism.

International  RTD activity

Research-and-academic staff members of the Department over the last 5 years, has actively participated in international scientific conferences on topical issues of improving processes and technologies for processing of agricultural raw materials, improvement of teaching methods of implementation of best practices, improving the competitiveness of enterprises, entities hotel-and-restaurant management, improvement of service quality, raising  of the efficiency of hotel-and-restaurant services and other priority areas, as well as in specialized fairs and exhibitions.

Department has signed a contract for the establishment of scientific-and-technical production with the Department of Tourism of the New Kazakh Economic University named after Turar Ryskulov. The subject of the contract is a joint cooperation to improve the quality of services in the hotel-and-restaurant business, and improving the training of specialists of professional orientation «The Restaurant Industry and Hotel Business».

Including studied the possibility of participation in the European Commission's Framework Programs (FP) of Research-and-Technological Development (RTD), in particular in FP7 (2007-2014).

Currently Department spends much organizational work on searching for profile consortia within WP-Food 2016-2017 of the  Sub-priority  Food Security Priority area  Societal Challenges  2 EU Program Horizon 2020 (2014-2020)    first of all  – in the field of improving service technologies of restaurant industry and hospitality business of point of view of providing of safety and sustainable stability of food products  consumed by them and  in others relevant research areas.

Material-and-technical base of the Department

For scientists and students in the educational laboratories created all necessary conditions for carrying out research work, as well as for practical laboratory classes for the acquisition of specialized skills and abilities, including 10 computers, two slide projectors, scanners, multifunction printers, DVD- player, a VCR and a TV to display training films. To conduct laboratory studies on profile academic disciplines Department has specialized furniture and equipment, thematic tables, display art-master-class, visual displays, videos and slides to visually support of lectures.

At the Department are:

  • Laboratory of interactive technologies learning and research work with an online access to the Internet
  • 1 Auditorium
  • Laboratory of organization of restaurant service
  • Laboratory of hotel services organization
  • 1 Specialized Cabinet of Design.

Basic expertises and RTD carried out by the Department  for project customers.

Specific profile scientific research & technology development (RTD) and industry sectoral expertises that  the Department of Management of Organizations  can actually performs in the case of address to him with such request possible European project consortium within the Horizon 2020 Programme:

  • Applied targeted research and industry expertise in the field of development of recommendations to improve the standardization and certification of services of hotel-and-restaurant business.
  • Applied targeted research and industry expertise in the field of development of strategies of development of enterprises of restaurant industry and tourism.
  • Applied targeted research and industry expertise in the field of theoretical and practical aspects of the preservation of biologically active substances in the processing of fruit and vegetable raw materials (SFS-37-2016).
  • Applied targeted research and industry expertise in the field of modeling of combined processes and the development of resource-saving equipment for the processing of fruit and vegetable raw materials (SFS-34-2017).
  • Other specialized applications targeted research and industry expertise (SFS-38-2016).

Scientific achievements of Department

Scientists of the Department developed and implemented 4 science-based food technologies, in accordance of results of the RTD works were published more than 700 publications, including 8 monographs, 17 textbooks, 10 regulatory and technological documents, 60 patents and copyright certificates, established scientific collaboration with academic and research institutions in Kazakhstan.

Much attention at the Department is also paid to scientific publishing activity, namely:

During the time of reorganization of the Department (since 2007), researchers of the Department had published more than 700 scientific works, including 8 monographs, 5 textbooks, 12 manuals, 2 collections of regulations of State regulation in the restaurant business, more than 600 articles and abstracts, received more than 60 copyright certificates and patents, which are embedded in the food industry and restaurant facilities of different regions of Ukraine.

Dr. Oleg Tereshkin, Prof., TechSciD, researcher of Department of Hotel-and-Restaurant Business carries out his planned scientific work on the theme The Development of Draft Regulations for the Bachelors in the Area of Services for Specialty 5V091200 of professional orientation – «The Restaurant Industry and Hotel Business» in the Dept’s Specialized Cabinet of Design using modern specialized computer equipment and software.
